The Butchery established in 2011, by third-generation butcher Nathan Mills and partner Ruth Siwinski. They specialise in sourcing native and traditional breeds from small, independent farmers with high animal welfare and land management practices.
To give farms the best price and minimise waste, animals are bought as whole carcasses and then dry-aged for maximum flavour and tenderness. The Butchery Ltd is one of the pioneers of entirely whole-carcass butchery and produce some of the best tasting meat in the industry.
